Strawberry Cheesecake Love

That time of the year is coming up when strawberries will be in season!! I could not wait to share this quick and easy recipe with all of you. My only regret on this post is my little camera just doesn't do justice on how these look in person. ( I need to purchase a better camera now that I'm blogging:) Okay, so let's get started shall we?!

You only need 4 ingredients....


Strawberries
Cream cheese
powdered sugar
vanilla

First- Wash strawberries!!




Then you will want to cut the bottom of the strawberry off like this



So it sits up like this




Then cut top off, and hollow the inside out. Like so

Okay, stay with me here. Now to the yummy part! Mix the softened cream cheese ( the whole block ) about 1 cup of powdered sugar ( this is to your liking... We like ours extra cream cheesy tastin) and 1/4 tsp of vanilla., together with hand beater. For some reason I didn't take a picture of that, but I'm sure you got it. Then I put the cream cheese mixture in a pastry bag with a star shape tip. If you don't have that, you can also use a sandwich bag and cut one of the corners off. You won't have the fancy star shape, but it doesn't really matter, they'll be gone in 2 seconds!! PROMISE!!!

I let the strawberries sit on a paper towel while I'm preparing the mixture. This allows the water ( from washing), to dry a little before you put them on a pretty plate. Then just simply fill the strawberries up with the good stuff!

Enjoy these!!! You can drizzle a little chocolate on top too if you wish!!

Easy Granola



Keeping this Granola well stocked in my house is pretty impossible!! I double the batch and it lasts oh about 1-2 days!!! Not kidding. Good thing it is easy to make. My 8 and 9 year old girls can make it. There are so many different varieties to this, this is just how I make it for my family. Okay, so this is what you will need:


Just a quick note: When I first got married, ( 19 years ago) I didn't really know much about cooking, so I would call my grandma and ask her how much of this ingredient or that ingredient to put in a recipe and she would always reply," Oh I don't know I just put a little of this or a squeeze of that." So, with that said, that is kinda how I cook now, unless I'm baking. So I will do my best with measurements on this

21/2 to 3 Cups Quaker Oats
1/3 Cup Chopped Almonds
1/4 tsp salt
1Tbsp vanilla
1/3 Cup Honey
1/4 Cup maple syrup
1/4 Cup Vegetable oil
cinnamon add as much or as little as you want
cranberries
chocolate chips

Put all in bowl except cranberries and chocolate chips


Mix and spread on a cookie sheet, sprayed with cooking spray and bake at 350 for 20 minutes. You may want to stir it up a bit in between the 20 min.

I like mine a little more crunchy, so I cook mine a little longer, I just keep an eye on it.

Let cool completely before adding the cranberries and chocolate chips!! Then, you gotta put in a pretty jar! Right?

Yummy Cinnamon Biscuits

Today I am going to share with you this awsome yummy recipe, that has been in the family as long as I can remember. I even made this for my third grade class for show and tell 30+ years ago..( man I'm getting old!). Every time I make this, people want the recipe and it is sooo easy to make. Just a heads up, This is not diet food.. just warning ya.

Yummy Goodness!!

First thing you'll need are these simple ingredients:
  • Grands Biscuits ( I used homestyle but any kind will do )
  • Brown sugar
  • Cinnamon
  • Butter
Spray pan with cooking spray and put biscuits in pan.

Generously, put brown sugar on top of biscuits. If it looks like it is to much... put some more!!! LOL!

Then sprinkle cinnamon on top! I love cinnamon, so I put alot.

Next, melt butter approx - 3/4 of stick and drizzle it over your thighs! Oh I mean, On top of cinnamon layer!

Bake at 350 degrees for 20 minutes!

While thats baking I just take powdered sugar and a little water to make a quicky frosting.


Once they are done, let them sit for about 5 minutes to cool before putting frosting on.
